Spice-rubbed Salmon and a trip to the Farmer's Market


First of all, I just couldn't wait for our CSA to start, so I went to the Farmer's Market yesterday! I am so excited about what I got...vine-ripened tomatoes, baby cucumbers, spicy baby arugula (YUM!), new potatoes, romaine lettuce, and some irises for Mother's Day.


 I wish I could do all of my shopping that way...outside, interacting with so many people, live music...


Last Thursday I made this salmon. For lunch, actually. The rub was delicious!


I got the rub from a recipe for salmon tacos, here.

Here's the ingredients (proportions set for 0.5-1 pounds salmon):

3/4 tsp ground coffee (I know, crazy!)
1/2 tsp brown sugar
1/2 tsp ground cumin (I used whole seeds and it was fine)
1/4 tsp coriander
1/4 tsp chile powder (I don't have this, so I used 1/8 tsp cayenne)
1/4 tsp salt
1/8 tsp freshly ground black pepper
1 tbsp olive oil

Mix and spread onto salmon fillets. Cook for a few minutes per side. I used a grill pan!


Very tasty!
